I've changed to using bacon for split pea soup, because the flavor is so good and you don't end up with the funky bits of gristle from the ham bone. So think maybe I'll give this a try tomorrow. Maybe you should try more and see what you think! I guess it'd depend on how fatty the slice is. I usually have a package of bacon in the freezer because it's always on a buy 1 get 1 free sale. I use the freezer bacon for soups, sauces, etc. So I technically didn't use just a slice, I cut about an inch through all the slices. If I put them all together, it'd amount to a slice though.
